DOUBLE CHOCOLATE SWEET POTATO AVOCADO BROWNIE BITES
I’m a sweets girl, okay. I’d say you caught me, but if you know me I’m sure you’ve seen a healthy treat recipe from me a time or two. So, here you have it. My most recent chocolatey creation that you’re NOT going to want to share, but you will, because you love your kids and spouse haha!
These delicious brownie bites came about while I was playing in the kitchen trying to alter my Avocado Brownie Recipe to create healthy treats for my little boy who is OBSESSED with both sweet potatoes and avocados. It was his first birthday, and I knew there’d be an entire village of people wanting to give him treats. Rather than running to the store for a traditional sugar-loaded cake that I knew would leave him wired for hours on end – I decided to whip up these Good news, they were a huge hit!
The avocados in the recipe provide all the healthy fats while giving the brownies the creaminess they need without ever missing the butter and the sweet potatoes pack a sweet punch of vitamin A that you won’t find in any other chocolatey brownie!
With that being said, this is a treat and should be consumed in moderation! They are freezer friendly, so I suggest you let them cool and then drop a few into freezer bags for later! Simply pull them out of the freezer to thaw when you need a little something something.

Double Chocolate Sweet Potato Avocado Brownies Bites
Ingredients
- ½ cup sweet potato puree [1 small roasted sweet potato]
- 1/3 cup honey
- 1 small avocado
- 2 whole eggs
- 2 Tbsp. coconut oil, melted
- 3 Tbsp. coconut flour
- 1/3 cup raw cocoa powder
- 1 ½ tsp. baking soda
- ¼ tsp. sea salt
- 1/2 cup Enjoy Life Mini Chocolate Chips (low-sugar and dairy-free), otherwise 70% Dark chocolate Chips
Instructions
- Preheat oven to 350 °F. Line mini muffin tins with liners or grease with coconut oil.
- Begin by washing, peeling and baking or boiling your sweet potato - then mash it.
- Combine all of the ingredients in a blender, mixer or food processor, except for the chocolate chips.
- Blend the ingredients until smooth.
- Fold in ¼ cup chocolate chips
- Fill each muffin tin 3/4 with batter. Sprinkle with remaining chocolate chips and pinch of sea salt.
- Bake for 15 minutes. Then remove from oven and let cool for 3-5 minutes. Transfer brownie bites to a cooling rack. Unwrap and ENJOY!
